When grown at cool temperatures, the caps will be a darker than when grown above 65F.
Blue Oyster mushrooms grow best in humid conditions with ample fresh air exchange (FAE) to keep the carbon dioxide levels low (~700ppm). If mushrooms have long stems with small caps, they need more fresh air from outdoors where ambient CO2 levels are ~400ppm.
